I often make almond cookies, because I like them a lot, I love the consistency of almond paste and this almond flavor that makes them unique!. These classic Italian almond cookies are very easy to make and extremely easy to eat. Perfectly sweet. Soft inside and slightly crispy on the outside. Make them again they are superb and they stay soft for several days, just keep them in a box!.

Ingredients:
  • 200g Almond Powder ( 2 Cups )
  • 120g Sugar ( ½ cup + 1 Tbsp )
  • 1 Tbsp Lemon zest
  • 1 Tsp Vanilla extract
  • 3 Egg whites
  • Pinch of salt
  • icing sugar

Instructions:
  1. In a bowl, put 200g Almond Powder ( 2 Cups )
  2. Add 120g Sugar ( ½ cup + 1 Tbsp )
  3. Add 1 Tbsp Lemon zest
  4. Mix well
  5. Add 1 Tsp Vanilla extract
  6. Add 3 Egg whites
  7. Add a Pinch of salt
  8. Mix well
  9. Form into balls
  10. Roll the balls in icing sugar
  11. Place them 2 inches apart on the baking sheet
  12. Gently press an almond in the center of each cookie
  13. Bake in preheated oven at 170 °C - 338 °F for 10 to 15 minutes
